A Colorful Creation: Rainbow Salad Recipe

Not only is it chock-full of healthy fruits and veggies, but it’s a tasty addition to that backyard BBQ you have planned.

Carbon Health Rainbow Salad Recipe

Prep Time: 10 minutes Total Time: 10 minutes

Rainbow Salad Ingredients:

  • ½ head of purple cabbage chopped
  • ½ cup of blueberries
  • 1/4 cup of shelled edamame
  • Bunch of chopped kale
  • 1 yellow pepper chopped
  • 1 cup of ribbon-cut carrots
  • 1/4 cup of dried cranberries
  • A sprinkling of your choice of pepitas, sunflower seeds or pumpkin seeds

Rainbow Salad Dressing Ingredients:

  • 1/4 cup of apple cider vinegar
  • 1/2 cup of olive oil
  • 2 teaspoons of Dijon mustard
  • 2 teaspoon honey
  • 1 teaspoon garlic, minced
  • Sea salt to taste
  • Freshly ground black pepper to taste

Directions:

  1. Combine chopped cabbage, kale, peppers, and carrots in a large salad bowl.
  2. Sprinkle desired amount of blueberries, edamame, dried cranberries and seeds and mix into the salad. Set aside.
  3. In a separate bowl, combine the apple cider vinegar with the olive oil, Dijon mustard, honey, and garlic. Whisk thoroughly and top with salt and pepper.
  4. Assemble your salad and drizzle dressing on top. Bon appetit!
